OK, I have to ask because I’m really dumb - how do you get a standard North American keyboard to spit out umlauts?

It’s all in the character entities. Check out Aardvark’s “Simple Character Entity Chart” for details. One of my favourite bookmarks.
Look for “diaeresis”.
Jason, of course, knows simple characters.
